Bake Muffins with Healthy Powdered Greens

Health & wellness expert Amanda Valentine is convinced anyone can bake these delicious berry muffins.

I didn’t really think I could bake. Prep healthy meals, yes. Mix flour and eggs with other stuff and wait 30 minutes for it to do what it does in the oven, no. It’s a little surprising because most of my professional and personal life revolves around food — healthy, nutritious food that helps you lose weight and keep it off.I share my own weight loss journey as a guide to offer helpful, real-life tips and tricks through conversations with guests and experts on my daily podcast, Pound This. Along with baking, I also don’t have a lot of experience with using supplements of greens my food prep. Honestly, many supplements I’ve tried before, mostly in drinks and shakes, taste gritty, earthy — kind of gross. I was willing to try the muffin recipe below because NuEthix Gourmet Greens is none of the yucky stuff. It’s delicious! I’m also influenced by the beautiful pink color it adds to the muffin batter when stirred in. Also, we all know it’s difficult but important to get enough greens in your diet.

For this recipe I added a frozen berry medley because I had it in the freezer, but you can use any kind of fresh or frozen berries. You can use regular flour or gluten-free. Either way, it’s important to use nonfat milk and nonfat yogurt. Don’t worry about the taste — along with the berries, you get to add real maple syrup!

Try it! Believe me, if I can bake these berry muffins, so can you. 

 

 

Berry Muffins Recipe & Instructions

1 tbsp (14g) coconut oil

1 large egg

1 tbsp (15mL) vanilla extract

½ c (120mL) maple syrup

½ c (120g) plain nonfat Greek yogurt

½ c (120mL) nonfat milk

1 ½ c (210g) frozen mixed berries

 

2 scoops of NuEthix Gourmet Greens — Berry flavor

2 c (240g) flour of choice

¾ tsp (2g) baking powder

¾ tsp (2g) baking soda

¼ tsp (2g) salt

1. Preheat the oven to 350°F, and lightly coat a pan of 12 standard-sized muffin cups with nonstick cooking spray.

2. In a medium bowl, mix together the flour, baking powder, baking soda, and salt. In a large bowl, whisk together the coconut oil, egg, and vanilla. Stir in the maple syrup and yogurt, thoroughly mixing until no lumps remain. Alternate between adding the flour mixture and the milk, stirring until all mixed together. Add berries to mixture and fold in.

3. Add batter to muffin cups and bake at 350°F for 30 minutes (oven times may vary).
